I'm making a list here of all the addons I use or might be useful to new (or even seasoned) players. I usually get all of my addons from ESOUI, and I recommend getting Minion too for addon management and automatic updating.
So here's my list:
No Spin or No, thank you! are a must-have. These basically stop your character from spinning around when you open a menu, so it's useful during dances or roleplaying if you want to quickly check something in your inventory or stats, without disrupting your dance.
ESO Theater has a list of all the emotes available in the game, so you can turn them on with just one click.
Master Merchant is probably one of the best trading tools available. It gives you a lot of useful information about individual items, so you can list them at good prices in guild stores, and make sure you're not overpaying for stuff. Lots of tips on trading here.
AI Research Grid gives a nice list of all the item traits you've researched and have yet to research in a handy pop-up window. It works across characters as well, so you can check if a different character requires an item for research before you trash/sell it. Just type /airg to check.
Rare Fish Tracker is a pretty useful addon for fishing; it shows all the fish that can be caught in a zone, and sorts it by the types of water that the fish can be caught in. It also highlights the fish you've caught, so you don't have to waste more bait fishing in the wrong water types. Tips on fishing here.
Destinations has almost everything you could need on a map. From unknown destinations to quest givers and dungeon boss locations, as well as collectible/achievement locations, get this. You won't regret it.
Also get Advanced UI, this comes with a handy little map that indicates your location on your main screen. No more getting lost, ever.
Foundry Tactical Combat (FTC) gives you a lot of statistics about your combat. It comes with a lot of settings, so don't be intimidated by the amount of information that suddenly pops up on your screen; rather take some time to customize it, and it'll probably change how you play the game (in a good way, of course).
I use FCO Item Saver, which lets you annotate all the items in your inventory. So you can assign colours to armour sets to easily switch between them, mark items for deconstruction, research, or selling, and so on. Quite useful.
Shissu's Guild Tools is pretty handy in all sorts of ways. Just test this out if you have a hard time managing your guilds, or would like to know more information about guild members. It has too many good things to list.
Roomba - Guildbank Stacker, as its name suggests, is handy if you have an overstuffed guild bank with lots of duplicate items (particularly crafting materials). It will stack all of these items together and free up some space in your guild bank.
Clock - Tamriel Standard Time gives you in-game time as well as the moon phase, in case you want to go vampire/werewolf hunting.
Trophy Hunters to keep track of the trophies collected by all your characters, so you can save some in case a different character needs it.
